When I was a kid (pre-Celiac diagnosis) “Shake & Bake” Chicken was a staple in our family’s diet. I always looked forward to the moist chicken and crispy skin and I have missed it for years. When some GF options became available, of course I tried them all. Most were rice or corn-based, over spiced and always disappointing. Recently, in an apparent moment of inspiration, I tried my own version, using our GFP Pancake & Waffle Mix, and it turned out to be perfectly delicious! My family LOVED it too!
