Honestly, finding healthy gluten-free solutions is easier than ever this year. As Amy and I approach our 13th year since being diagnosed with Celiac Disease we have seen a lot of changes in our Gluten-Free world. Back in 2005 hardly anyone (including us) knew what gluten was and that a huge challenge. The first part of our the journey toward a healthy GF lifestyle was simplified with help from the Celiac Disease Foundation.
Then we learned to make healthy choices from experts like Shelley Case. And cooking Gluten-Free became a real adventure with Carol Fenster’s Cookbooks.
I also subscribed to some of the awesome Gluten-Free Publications like Gluten-Free and More.
Today, as more and more mainstream manufacturers jump on the gluten-free bandwagon, our Gluten-Free world is inundated with choices – many of them filled with fat, sugar and preservatives. Be careful what you wish for, right. In 2018 I resolve to continue my quest to create healthy Gluten-Free Choices for the millions of consumers who – for whatever reason – are avoiding Gluten.
