Why do we call it “Crazy Breakfast”?
Because you’d have to be crazy to put these ingredients together for breakfast.
Crazy Breakfast

You'd have to be crazy to not like this protein-packed, gluten-free breakfast
Ingredients
- ½ cup GFP oat groats, (pre-cooked and heated)
- 2-3 cups fresh baby kale -and/or baby spinach and arugula
- 3 eggs (egg whites, or egg replacement)
- cherry tomatoes – cut in half
- Black lentils - Optional
- 1 teaspoon cooking oil of choice
- salt and pepper to taste
- Hot sauce of choice (optional)
Instructions
- Heat pan. (I love my Lodge Cast Iron for this) Then add oil and sauté greens until soft (set aside)
- In another pan: Cook beaten eggs to desired texture
- Add tomatoes to greens and heat through – until tomatoes start to soften
- Sprinkle cooked groats and lentils over greens
- Drizzle with hot sauce (optional)
- Enjoy!
