Crazy Breakfast

Serves: 2
- ½ cup GFP oat groats, (pre-cooked and heated)
- 2-3 cups fresh baby kale -and/or baby spinach and arugula
- 3 eggs (egg whites, or egg replacement)
- cherry tomatoes – cut in half
- Black lentils - Optional
- 1 teaspoon cooking oil of choice
- salt and pepper to taste
- Hot sauce of choice (optional)
- Heat pan. (I love my Lodge Cast Iron for this) Then add oil and sauté greens until soft (set aside)
- In another pan: Cook beaten eggs to desired texture
- Add tomatoes to greens and heat through – until tomatoes start to soften
- Sprinkle cooked groats and lentils over greens
- Drizzle with hot sauce (optional)
- Enjoy!
