Gluten-Free Prairie Good, Better, Best Baked Oatmeal !!!

Gluten-Free Prairie Baked Oatmeal -

This high-protein breakfast treat comes together quickly and sticks with you all day. The perfect make ahead breakfast - about 10 servings. Easily re-heat - could be Breakfast for a week
Ingredients
  • Preheat oven to 350 degrees. Grease 8x8 or 6x11 baking dish
  • Ingredients:
  • 1 ½ cup Gluten-Free Prairie Oatmeal (148 gm)
  • ½ cup Montana Mornings Granola (61 gm)
  • ½ cup brown sugar
  • 1 tsp baking powder
  • 1 ½ teaspoon cinnamon, 1 ½ teaspoon nutmeg, ½ teaspoon ginger (optional)
  • ½ salt
  • 2 eggs (lightly beaten)
  • 2 cups milk (nut or oat milk work great too)
  • ½ Cup brown sugar
  • 1 teaspoon vanilla
  • ½ cup dried berries of choice (blueberries, cranberries, raisins, dates)
  • 2 apples, cut into bite-sized pieces
  • ¼ cup each pecans & almonds
  • 1-2 TB melted butter
Instructions
  1. In medium bowl mix together oats, brown sugar, baking powder, cinnamon, nutmeg, ginger (if desired) and salt
  2. In separate large bowl whisk eggs together with milk, vanilla. Stir until combined
  3. Add dry ingredients to wet along with dried berries and apples. Mix until well combined
  4. Mix pecans & almonds with melted butter (set aside)
  5. Pour the oat mixture into prepared baking dish
  6. Spread butter & nut mix on top
  7. Bake 40-45 minutes until brown
  8. Let cool for about 10 minutes before serving
  9. ENJOY!
