Gluten-Free Prairie Buttery Skillet Biscuits 2.0 – you won’t believe the secret ingredient

A couple of years ago I posted my first version of Buttery Skillet Biscuits.

Everyone loved them and that was that. Then a few weeks ago Rick (husband) requested the biscuits with our Chicken & Gravy for dinner. It was a beautiful late summer afternoon and after a long day in the Bakery, I felt like I just needed to get on my horse (my best meditation for sure). So I got to thinking….I had our fresh Pizza Dough Ball in the fridge. (available everywhere in Montana and the mix on Amazon)

Gee, I thought….the two products share many of the same ingredients. Why not? I put my 12 in cast iron in the oven set to 425 degrees. Next I pulled out the food processor, cut up 1/2 cube butter and measured out 1 cup of plain yogurt.

Putting it together : I crumbled 1/2 the fresh dough ball (equal to 1/2 Pizza mix) into the processor. I added the butter and yogurt and pulsed about 5 times. The consistency was much like cottage cheese.

Finally using a large soup spoon I dropped the dough onto the hot skillet(where it immediately started to sizzle as the butter melted into the skillet. I  put it back in the oven for about 17 min.

OMGoodness! They were fantastic.

In the past few weeks I’ve made these Biscuits for friends and family. They are consistently crispy with a soft center. Very Buttery! I don’t we’re ever going back. I love “Happy Accidents”.
