Zucchini Fritters

If you’re looking for creative ways to use your abundant zucchini harvest, these savory Zucchini Fritters with oat flour hit the spot.
Ingredients
- 2 cups zucchini, grated
- 2 eggs, beaten
- ¼ cup chopped onion
- ½ cup Gluten-Free Prairie Toasted Oat Flour
- ½ cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 tablespoons oil (grapeseed is our preference)
- salt and pepper to taste
Instructions
- Combine shredded zucchini, eggs, onion, and toasted oat flour in a medium mixing bowl.
- Add Parmesan cheese, mozzarella cheese, salt and pepper. Mix well
- Heat oil in a skillet over medium-high heat. Drop about 2 tablespoons of zucchini mixture into pan. Flatten to about ½ inch thick and cook thoroughly until golden brown.
- Drain on paper towels.
- Top with a dollop of sour cream and a sprinkle of chopped chives and serve.
