These light and crispy waffles are a treat for Breakfast, Brunch and Dinner too. I always make a double batch

Serves: 4 Belgian waffles
Ingredients
  • Heat Waffle Iron
  • 1 Cup Gluten-Free Prairie Pancake & Waffle Mix
  • 1 egg (beaten)
  • 1 cup milk (or milk substitute)
  • ½ tsp vanilla
  • ½ tsp almond extract
  • 2 TB Coconut oil (soften to liquid state)
  • ⅓ cup chopped pecans (optional)
Instructions
  1. Place mix in a medium sized bowl
  2. Whisk together egg, milk, vanilla and almond extract.
  3. Add coconut oil and mix well.
  4. Add liquid to mix and stir until well combined
  5. Stir in pecans (if using)
  6. Pour about ½ cup batter into Belgian Waffle Maker. Bake for 5 min
  7. Note: For crispiest waffles, heat waffle iron in between bakes
