Buttermilk Belgian Waffles

These light and crispy waffles are a treat for Breakfast, Brunch and Dinner too. I always make a double batch
Ingredients
- Heat Waffle Iron
- 1 Cup Gluten-Free Prairie Pancake & Waffle Mix
- 1 egg (beaten)
- 1 cup milk (or milk substitute)
- ½ tsp vanilla
- ½ tsp almond extract
- 2 TB Coconut oil (soften to liquid state)
- ⅓ cup chopped pecans (optional)
Instructions
- Place mix in a medium sized bowl
- Whisk together egg, milk, vanilla and almond extract.
- Add coconut oil and mix well.
- Add liquid to mix and stir until well combined
- Stir in pecans (if using)
- Pour about ½ cup batter into Belgian Waffle Maker. Bake for 5 min
- Note: For crispiest waffles, heat waffle iron in between bakes
