Simple "Shake & Bake" Chicken Recipe

Ingredients
  • 3-4 pounds chicken pieces (we love legs & wings, but thighs & breasts taste great in this recipe too)
  • ½ cup GFP Pancake & Waffle Mix (our All Purpose Flour Blend works great too)
  • 1 teaspoon Kosher salt
  • ½ teaspoon chicken seasoning (I used Montreal Chicken Seasoning from McCormack )
  • ¼ teaspoon sage
  • 1 teaspoon paprika
  • ¼ teaspoon white pepper
  • 7 TB unsalted butter
Instructions
  1. Preheat oven to 450 degrees
  2. Spray a 9x12 baking dish with cooking spray & add butter
  3. Melt butter in pan in oven (be careful not to burn)
  4. Spread butter evenly – set aside
  5. In medium bowl whisk together GFP Pancake Mix and seasonings
  6. Pour into a large resealable bag (Zip Lock Brand is reliable)
  7. Add chicken pieces and shake until well coated
  8. Place coated chicken in baking dish – skin side down
  9. Bake 20 min. Then turn chicken over and bake about 20 min more until instant-read thermometer reads at least 165 degrees
