Higher Protein Oat Pancakes

We’ve ramped up the protein and added a surprising fluffiness so that no one will believe these Higher Protein Oat Pancakes are gluten-free!
  • 4 eggs, beaten
  • ½ cup low-fat cottage cheese
  • ½ cup sour cream
  • 1 cup Gluten-Free Prairie All Purpose Flour Blend
  • 9 tablespoons low-fat milk (almond or soy as desired)
  • ¼ cup coconut oil
  • 2 tablespoons sugar (white, brown, honey, Stevia, or equivalent)
  • 1 teaspoon pure gluten-free vanilla
  1. Blend all ingredients until smooth.
  2. Heat griddle to medium-high. Cook about 2-3 minutes.
  3. Add toppings of your choice.
