Brown Butter Baked Oatmeal with Red Pears & Pecans

Jump start your day with this simple hearty breakfast. Perfect for a brunch with friends. It hits all the high notes! Comes together quickly. High protein & fiber. Company good & makes enough for left-overs when the guests go home
Ingredients
- 2 eggs
- ¼ C butter
- 1¾ cups milk (or other milk substitute)
- ¼ cup pure maple syrup
- 1 TB pure vanilla extract
- 2 cups Gluten-Free Prairie Oatmeal
- 1 teaspoon baking powder
- 1½ teaspoon cinnamon
- ¼ teaspoon salt
- 2 small red pears, diced ( bartletts are ok too)
- ½ cup chopped pecans (optional)
Instructions
- Preheat oven to 350 degrees. Spray 9x9 in pan with cooking spray.
- In a large bowl, whisk together the eggs, milk, maple syrup, & vanilla.
- Add oats, cinnamon, baking powder, and salt.
- Stir in diced pears
- Set aside
- Make the Brown Butter: Place butter in small sauce pan over medium heat. Melt and continue to cook as it starts to crackle and foam and turn an amber color. Whisk continuously as the butter begins to brown (about 2 minutes) and emit a delicious nutty aroma. Remove from heat. Cool for 5 min
- Add Brown Butter to oat mixture and blend well. Top with chopped pecans (if using)
- Bake 35-45 min until golden brown and center is set.
- Cool 10-15 min.
