Gluten-Free Cupcakes with Oat Flour

Who doesn’t like cupcakes? Am I right? Well, these gluten-free cupcakes are a treat for any time of year. They are light, fluffy, and good for you too! By using our Gluten-Free Prairie Toasted Oat Flour, we add protein and fiber to these indulgent mini cakes. Decorate them for a birthday, Halloween party, or Christmas gathering, or leave them totally naked. They are going to disappear, so make sure you taste test a couple before the crowd gets to them.

Gluten-Free Cupcakes with Oat Flour

For these gluten-free cupcakes, use our Gluten-Free Prairie Toasted Oat Flour to get a light texture and all the protein and fiber from our whole grain oats.
Ingredients
  • 1½ cups Gluten-Free Prairie Toasted Oat Flour
  • ¾ cup tapioca flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 teaspoons baking powder
  • 1 teaspoon xanthan gum
  • 4 eggs
  • 1 cup white sugar
  • ⅔ cup mayonnaise
  • 1 cup milk
  • 2 teaspoons gluten-free vanilla extract
Instructions
  1. Preheat oven to 350. Place cupcake cups in cupcake tin (if using; otherwise lightly grease and dust with oat flour.)
  2. Mix oat flour, tapioca flour, salt, baking soda, baking powder, and xanthan gum together and set aside.
  3. Mix eggs, sugar, and mayonnaise until fluffy. Add the flour mixture, milk and vanilla and mix well. Pour batter into the prepared cupcake tin about ¾ full.
  4. Bake at 350 (175 Celsius) for 25 minutes. Cupcakes are done when they spring back when lightly touched or when a toothpick inserted near the center comes out clean. Let cool completely, then frost if desired.

    Hi I’m glad I got on this site as I wanted to make the cupcakes on the back of the package of oat flour. the full ingredient list is not there but it is here on the site. thanks again .They sound yummy!

    I too found the recipe and was astonished that the ingredient list did not match with the instructions. I had already transferred the flour to a container and thrown the package away… Picture, if you can, a 75 year old handicapped woman digging through the trash to find the cut up bag the four came in. But, being a WOMAN – I dug through newspapers, soda cans, milk cartons, paper towels and everything one can think of … AND I DID FIND IT. Unfortunately, I hadn’t missed any of the recipe (I love it when I’m right). I had been having a battle with my computer for two days because it too decided to test my way of sticking to it until I win! Well, I gave my computer one more try … and it worked! I WON .. at least that battle. On with another battle to try to win the war.. I searched through your website and I found the recipe … mayonnaise, eggs, milk, and all of the other missing ingredients. I’m anxious to try the recipe … but NOT TODAY. I’ve won two battles, no sense in testing myself for fear I won’t win 3 in a row… LOL. Thanks in advance for putting the recipe online. I’ve no suggestion for the missing ingredients on the package except to paste a sticker on the bag saying ‘GO TO OUR WEBSITE FOR CORRECTED RECIPE’. Wish me luck with making the cupcakes .. on another day. Janet

      Thanks for your comment. So sorry for the error on our flour bag. We posted the correction as soon as we found it – unfortunately we had 10,000 bags to use up. We are about at the end of the supply and anew pouch with new artwork is in the works. A sticker would have been a great idea, but of course too late for you. Again, I am so sorry. I hope you will give our products another chance another day.
