Serves: 10-12 fritters
Ingredients
2 cups zucchini, grated
2 eggs, beaten
¼ cup chopped onion
½ cup Gluten-Free Prairie Toasted Oat Flour
½ cup shredded mozzarella cheese
½ cup grated Parmesan cheese
2 tablespoons oil (grapeseed is our preference)
salt and pepper to taste
Instructions
Combine shredded zucchini, eggs, onion, and toasted oat flour in a medium mixing bowl.
Add Parmesan cheese, mozzarella cheese, salt and pepper. Mix well
Heat oil in a skillet over medium-high heat. Drop about 2 tablespoons of zucchini mixture into pan. Flatten to about ½ inch thick and cook thoroughly until golden brown.
Drain on paper towels.
Top with a dollop of sour cream and a sprinkle of chopped chives and serve.
